Well since my last post the HQ of Dorset Fine Dining has been completed at Manor Farm yard giving me a lot more space to work in, allowing me to push the business forward in preparation for next year. Offering catering for civil ceremonies as well as weddings we are positive next year will be a very good year, we have a supper clubs on the list as well as special events throughout the year. With new menus almost finished for wedding and civil ceremonies as well as dinner parties and events of all kinds for next year things are already looking good. We have just finished a wedding at the a victorian Barn near Sturminster Newton, everyone was very happy with the food and service and it was a pleasure to cater for them, big congratulations to the happy couple. Prices are very competitive and quotes give an all inclusive price per head, so there are no nasty surprises after the event.
We are producing assorted terrines this year ready for Christmas and will be selling them at several different outlets in and around Dorset, they are all handmade and contain only natural ingredients. All of our outside catering menus our professionally prepared, using fresh ingredients – locally sourced whenever possible.
- Warm Capricorn goats cheese and sweet red pepper tart, leaves, flowers, raspberry vinegar dressing
- Homemade Local pork and seasonal game terrine, ale chutney, toasted brioche
- Fresh salmon and prawn terrine, lemon dressing, crisp bread
- Jerusalem artichoke soup, flowers and herbs
- Slow Roasted free range belly pork, apple, crackling, red wine sauce
- Fillets of plaice, champagne sauce, baby cucumbers
- Pan fried turkey breast fillet, sausage and bacon, bread sauce, stuffing, roasties and rich gravy
- Squash, potato and pesto pithivier with Somerset feta cheese
All the above served with a selection of seasonal vegetables and creamed potato unless otherwise stated
- Christmas pudding, brandy sauce
- Chocolate delice, black cherry textures, white chocolate crumble
- Vanilla creme brûlée
- Selection of local cheeses, biscuits, fruit and fig jelly

Well only five more days until my last Dorset wedding of the season. The couple have chosen slow roasted shoulder of pork with local apple juice and herbs, selection of salads, apple sauce, crackling, followed by a buffet of miniature desserts to include crumbles, fresh fruit, brûlée and a few retro sweets to set it off. A big thanks to food stuff for the fantastic miniature pots and spoons etc i will be using. Then finally a buffet of local cheeses, crackers, bread and fruit to run along side a bar dedicated to local beers, ciders and wines.
This will be a great day and hopefully weather will will be on their side.
Looking forward to next years weddings, parties and events, I have a few lined up and things are looking great, my production kitchen is now finished just outside of Sherborne allowing myself and my business partner Howard Lloyd great versatility and with the use of a kitchen in central London we are able to cover weddings and functions all over the south west and London inclusive.
Well we had a great weekend last week a wedding at Forde Abbey all went really well and the bride and groom loved it. I wish them all the best and congratulate them both on their marriage,look forward to catching up after they are back from their honeymoon. The week before we held a bbq at Hayling Island for 80 pax and all went really well there and the weather was on our side.
Well these seem to be all the rage at present so i thought why not! i will soon be holding pop up restaurant evenings in Dorset at a variety of venues. i will be using local Artisan suppliers produce and creating a menu entitled a Taste of Dorset, it will be a set menu which will showcase the fantastic produce we have in and around the local area. If you know of anyone who maybe interested in having their produce showcased and in return a free meal or fancy coming along please get in touch. It will be a great night and you can bring along your own alcohol, non alcoholic cocktails we be able to be purchased for something a little different.
Well this is the busy weekend, lots of weeks work and it ends on bank holiday monday with a wedding for 450 people!! Can’t wait, taking a team of chefs there for 2 days prep and then the wedding on the monday. Its an Asian wedding where myself and my business partner have develloped a prestige menu for the client, they were looking for something completely different as far as Asian weddings go and i feel we have pulled it off and they love the ideas and concepts for the food. We have taken the normal menu and refined it, but still keeping the flavours which are recognised. Pictures will be up on the site within the next few weeks!
Its been fantastic weather over the last few weeks, we have had some fantastic bbq’s and everyone was very happy. Wide selection of salads and fantastic meat from my local butcher Wayne Pullen in Milborne Port, well worth a visit if you are passing. When we do a bbq we pull out all the stops from locally caught sustainable fish to fantastic vegetarian options also. We cover all over the south west and offer an all round great service with main emphasis on great food and friendly attentive staff.

Well it’s been a while now since my last post, however mainly because things have been really busy! which is great, i have been to London doing consultancy work and am now heading up a high profile wedding at the Grosvenor House Hotel in August for 500 people, with a great friend who runs a bespoke design company handling the project design, together we make an awesome team and have already bagged two more large consultancy projects this year alone. Watch this space there are lots of exiting things going on behind the scenes as well!
This has to be a chefs favourite time of year, all the fantastic produce is around, from asparagus, heirloom tomatoes, wild sea trout to lamb and fresh berries to name but a few oh and out now the fantastic elderflower is all around us in full bloom. Fantastic ingredient, free and with so many uses, we really need to start using whats around us a lot more i think all these free ingredients on the doorstep. I will be making elderflower lollies, lemonade, gazpacho, simply grilled asparagus with a poached duck egg, fantastic!
